I have many posts to write. Now that the Summer issue has been put to bed I should have a bit more time to catch everyone up on what I’ve been cooking.
This first one made me really happy. I was in the store last week, wandering the meat case yet again, trying to figure out what to cook. Ground turkey was on sale. I remembered my sister making some really good turkey burgers so I bought a package to give it a try. Well, I forgot to email her till late to get the recipe so I ended up winging it and what turned out was very good. They had an excellent flavor with a good bite.
1 pound of ground turkey
1 egg
6 or 7 fresh sage leaves cut into a chiffonade
1 large shallot, diced
½ cup of breadcrumbs
1 TSP fresh thyme
1 TSP red pepper flake
½ TBLSP garlic powder
salt and pepper to taste
Place all ingredients in a bowl and mix with your hands. Add the breadcrumbs gradually, you may need more than ½ a cup depending on the consistency of the mixture. You want to be able to form a patty without it falling apart.
After all the ingredients are thoroughly mixed place in fridge for 10 to 15 minutes to rest. Take out and form three to four patties. Place a non-stick pan over medium-high heat and add some oil of choice. Place the patties in the pan, cover, and let cook for four to five minutes a side. You can tell when they’re done by pressing down on the burgers, you don’t want too much give.

Also: if you serve these at your Q, then people won't get all rowdy, as the triptophane (sp?) will keep them down.
