Pork Belly

I am loving shopping at some of these smaller grocery stores in Skokie/Lincolnwood. I went to the Market Place on Oakton yesterday and say this one-pound piece of pork belly for a couple of bucks.

But here's the problem, I have no idea what to do with it. I cut a small strip off it yesterday and use it it some carbonara and it worked pretty well. The recipes I glances at all have me braising it and anyone in Chicago knows it's too hot to cook anything inside right now.

I'm thinking about smoking it and using it as bacon. Anybody have other thoughts?
